The Mother In The Vinegar Barrel

A slimy film of cellulose and bacteria is the actual engine that turns wine into vinegar.

Every bottle of real vinegar starts as something you could drink. Wine, cider, beer, whatever base alcohol is on hand. Turning that into vinegar means handing the job to a specific group of bacteria and getting out of the way for a while.

The bacteria responsible belong to a family called Acetobacteraceae, most commonly the genus Acetobacter. They're aerobic, meaning they need oxygen to work, which is why a vinegar barrel is never sealed the way a wine barrel is. Left with air and alcohol, these bacteria run a two-step conversion: first an enzyme called alcohol dehydrogenase turns ethanol into acetaldehyde, then a second enzyme, aldehyde dehydrogenase, pushes that acetaldehyde the rest of the way into acetic acid. Acetic acid is what makes vinegar taste like vinegar.

The visible part of this process is what's called the mother, a slimy, rubbery film that forms on the surface of the liquid. It looks unpleasant and it's the single most useful thing in the barrel. The mother is a biofilm, mostly cellulose produced by the bacteria themselves along with the living bacterial colony, and it's been used for centuries as a starter culture: drop a piece of an existing mother into a new batch of wine or cider and the bacteria colonize it far faster than starting from nothing.

A full conversion from alcohol to vinegar generally takes several weeks to a few months, depending on temperature, the strength of the starting alcohol, and how established the bacterial culture already is. We run ours slow, closer to two months than two weeks, because a fast conversion at high temperature tends to produce a flatter, more one-note acidity. Slower gives the bacteria time to also produce smaller amounts of other compounds, esters and trace amounts of other acids, that round out the sharpness instead of leaving raw sourness as the only note.

We check acidity with a simple titration every few weeks instead of guessing by taste alone. A young vinegar can taste sharp before the conversion is actually finished, and pulling a batch too early leaves leftover alcohol behind that throws the whole barrel off balance later on.

We keep a mother going continuously rather than starting fresh each time, the same way a bakery keeps a sourdough starter alive instead of buying new yeast every week. Every new barrel gets a piece of the last one. The bacterial population in our vinegar has an actual lineage this way, batch feeding into batch, rather than being reset from a bottle each time.

None of this requires anything exotic. Air, time, and a colony of bacteria that's been doing this exact job, turning alcohol into acid, since long before anyone bottled it on purpose. The mother sitting in the bottom of the barrel looks like something gone wrong. It's the only reason the batch works at all.
